Nivalis Nights voice acting and languages
Nivalis Nights is voiced in English only. Steam lists 11 languages for the text, and English is the single one marked with full audio, so players in the other ten read translated menus and subtitles over English dialogue.

Steam marks only English with full audio support. The studio says: “The in-game audio will be in English, and we are currently recording and implementing VO for all characters.”
Italian is not one of the eleven. The studio has not said whether more languages will follow.
Who is voiced
That covers every character, and there are more than 130 of them, each with a story of their own and side quests that play out differently depending on how you treat them. The characters page lists the ones named so far.
Your own character is a different case. You have no name, no visible face and no body beyond your arms and hands, which the character creation page explains. The studio has not said whether that character speaks aloud when you pick a reply.
Is there a cast list?
Not before launch. Neither ION LANDS nor 505 Games has named any of the actors. The studio cast them through an open audition call; the developer page has how many entries came in. Until the credits roll, any list of names is a guess.
How the translations were tested
A separate localization testing team works across all eleven languages: “This includes verifying voiceover synchronization and UI text accuracy.” For Chinese, Japanese and Korean the studio also prepares two fonts per language, so every character the translation needs is available in the interface.
